What should I expect when I order part of a beef?

First, you'll place your order and provide a down payment for the beef you want to purchase. During this process you will learn of the approximate pick up date for your beef.

Whether you know exactly what you want or you need some help deciding what to pick, John Bachus will make sure you get exactly what you need.

Weigh in

Once your beef is ready to be processed, we will notify you of the hanging weight of your beef, the total outstanding balance you owe, and when your beef will be ready for pick up.

Pick up your beef

After your beef has been processed, you'll come to Meier-Bachus Farms to pay the remaining balance and pick up your beef. Don't forget to wave at the cows!

  • What is hanging weight?

    The hanging weight is how your price is determined. The hanging weight is how much the animal weighs minus head, organs, hooves and hide. 

  • Is buying beef by the quarter cheaper than buying at the store?

    Buying by the quarter is cheaper than single cuts from the store. The reason is fairly simple; you are essentially buying in bulk. So although the upfront cost may seem large, if you took the weight of each cut and priced it out against a store you will find you are saving money by buying a quarter. The added bonus is that we are confident our beef is of higher quality than what you will get in the store. So you wind up getting better for less!

  • Why does it take two weeks to get my beef after they are taken to the processor?

    Your beef will hang to cure, which tenderizes the meat you will be eating.

  • When I buy a quarter, do I get a front or hind quarter?

    When purchasing a quarter, you receive a mixture of cuts from both the front and hind. It equals ¼ by weight. 

  • How many pounds of meat are in a quarter?

    A quarter is roughly 180- 200lb hanging weight. It varies by animal.  

    30% loss from hanging weight (deboned & trimmed fat)

    Example: 200lb.hw - 30% = 140 wrapped meat in your freezer

  • How long does a quarter last?

    A chest freezer will provide the most space and will keep your meat frozen the best. ¼ beef = 140lbs. wrapped meat: 4 cu. ft. of chest freezer space or 5 cu. ft. of upright freezer space. 

  • What kind of cuts can I expect?

    The great part of custom beef is just that.. it's custom! There are different types of cuts you can get out of each section and you get to choose. Here is a handy guide for reference from of the American Angus Association showing different sections and the cuts you can get. The processor will call you and ask how you would like your 1/4 cut. Don't worry though, they are well experienced with customers getting custom beef for the first time and will help you with the process.
